I have to admit…even though I follow a low carb, mostly Keto, mostly Paleo diet, there are foods that I just haven’t wanted to banish completely and permanently from my diet. Potatoes are one of those foods.
Now, don’t get me wrong, I actually really LIKE a lot of the faux potato recipes and even prefer them to actual potatoes. But that doesn’t change the fact that I’ve missed hashbrowns – the kind that are extra crispy, perfectly seasoned and hot off the pan.
Until now.
These Cabbage Hashbrowns are so good that I will never need potato hashbrowns again…seriously. Even my 17 year old son came back for seconds!

Cabbage Hashbrowns
Ingredients
- 2 eggs
- 1 t Simple Seasoning Blend or salt and pepper to taste
- 3-4 c cabbage shredded
- 1 T coconut oil
Instructions
- Preheat your pan and add the coconut oil. Swirl to coat.
- In a separate bowl, whisk the eggs and the Simple Seasoning Blend (or salt and pepper).
- Add the cabbage and stir until it is well coated.
- Add the cabbage to the pan and fry until crispy.
